Chocolate Topped Peanut Butter (or Almond Butter) Bars

Chocolate and nut butter are a divine and decadent match in these simple, no-bake bars. Peanut butter and chocolate is an absolute classic combination, though almond butter is a healthier option that not only tastes delicious, but is also loaded with vitamin E, B-complex vitamins and minerals. If you don't want to give up peanut butter in this recipe, try using half peanut butter and half almond butter for the best of both worlds.

INGREDIENTS:

1 cup aroma-free coconut oil or Earth Balance Buttery Spread, melted
2 cups organic graham cracker crumbs (ideally gluten-free graham crackers)
2 cups organic powdered sugar
1 cup smooth organic peanut butter or almond butter
1 1/2 cups semisweet chocolate chips
4 tablespoons organic peanut butter or almond butter

PROCEDURE:

In a medium bowl, mix together coconut oil or Earth Balance, graham cracker crumbs, powdered sugar, and 1 cup peanut butter or almond butter until well blended. Press evenly into the bottom of an ungreased 9x13 inch pan.
In a metal bowl over simmering water, melt the chocolate chips with the remaining peanut butter or almond butter, stirring occasionally until smooth.

Spread over the prepared crust.
Refrigerate for at least one hour before cutting into squares.
