Watermelon Ginger Mint Cooler

This cooling, spicy blend will keep you hydrated and clean inside and out all summer long. Watermelon (abundant in hydrating electrolytes and antioxidant vitamins C & A), pairs delightfully with spicy ginger (stimulates circulation, digestion and metabolism), cooling mint with a bit of bright lime. A pinch of cayenne pepper is surprisingly delicious, offering a blast of vitamin C and dynamic flavor. No juicer required – just blend and strain. Try blending with ice for a refreshing slushy drink.

Yield: 4-6 servings

INGREDIENTS:

6 cups cubed watermelon, chilled (about 1-1/2 pounds)
1-2 tablespoons chopped ginger
1 cup mint leaves
juice of 1 lime
pinch sea salt
pinch cayenne pepper (optional)
handful of ice (optional)

PROCEDURE:

Place all ingredients in a blender and blend on high speed until smooth.
Pour through a fine strainer or sieve for well-strained results, line the strainer or colander with cheesecloth.
For a slushy drink, return to blender, add a generous handful of ice and blend until smooth.

SERVICE

Serve chilled or over ice garnished with a sprig of mint.
